Peameal bacon is a Canadian invention, in particularly from Toronto. Peameal bacon can, just like regular pork bacon, be used inside sandwiches, topped with mustard and other toppings. Or simply eat it on its own and let it melt in your mouth.
It’s also known as cornmeal bacon and is wet cured, unsmoked back bacon from well trimmed lean boneless pork loin rolled in cornmeal.
Toronto pork packer William Davies, who came to Canada from England in 1854, is credited with its development.
The term "peameal bacon" comes from an historic practice of rolling the cured and trimmed boneless loin in dried and ground yellow peas to extend shelf life. Since the end of the first World War, it has been rolled in ground yellow cornmeal.
